I have decided that I will become "The Master Griller" this summer. Bought "The Barbecue Bible" cookbook...It's on!!! Corn on the cob, ribs, steak, veggies, chicken, keebobs, roast potatoes beware. I am on the grillin' war path. 3 out of the past 5 nights I've been on the grill.


So, anybody have any favorite/traditional/local recipes??? I am in the mood for some BBQ music! Have a steak/shrimp/squash/peppers and onion keebob marinading right now...mmmmm. Holla!

When I was just in New Mexico I had a hamburger that had chesse and green chiles in the middle. It was very good! Other than that I am a huge fan of steak, chicken, and hotdogs. I am not original....

i am a all beef hot dogs nice and crispy kind of gal! also, some chicken in any kind of marinade is good too!

ah, cleanface, you should meet my dad...he's a smoker. (not that kind...bud) smileys/smiley2.gifbut he smokes everything from the thanksgiving turkey, to the christmas ham, and all that's in between. as for myself, i'm a hamburger man, not the fast food kind. i marinate the beef with teryaki sauce and diced garlic...hmmmm...hmmmm...good Edited by: pfawnk

What about fish? If you put something down (so the fish doesn't flake and fall through) - you can grill salmon (mmmm..) or whatever. Also good are kabobs with shrimp, pineapple, peppers whatever. I'm going to have to clean out that dingy grill in my backyard soon now that it is FINALLY getting nice out.

vegetarian here, but i have had grilled fish before, and it is awesome! my favorite grilled item is corn on the cob, for sure, but I really like veggies infoil and vegetable shish kebobs with lots of homemade bbq sauce. yum yum yum


pfawnk...smoked cheddar is to die for. its hurts my tummy, but is worth it.

Right on. Definitely gonna get the fish grilling down too. Talapia, Mahi, Yellowfin Tuna...I'm on it! You have to use some tin foil, but then throw in somecut lemons, garlic butter, herbs and spices...mmmm. A couple summers back we caught a ton of Salmon on apay boat in Lake Michigan, the captain filleted it, my friend grilled it up, best fish I've ever had. It's gonna be fun learning all this.

i know it's hokey, but my kids can't get enuf of my beer butt chicken, with special rub.


Also have killer apple cider marinade ribs recipe thatare bone cleanin badazz. Garlic zucchini, onions, green pepsand taters on the freakin side--d-d-damn!

I love the summer beacuse at our beach house, we do a lot of grilling. We have one of those webber's that look old school. You know, it's round and only has coals, no gas. The food taste so good! I really think that the coals make the food taste a 100 times better than gas grilling.

Last call jalapenos


8 ounces cream cheese, 1 tbsp. cajun seasoning, 2 tsp. garlic powder, 15 large fresh jalepeno peppers, seeded and cut lengthwise, 15 slices of bacon cut in half. toothpicks


mix creamcheese withseasoning and fill each pepper with it. wrap stuffed peppers with bacon and secure with toothpick. grill until bacon is done.


beer brats


2cans beer. 2 tsp. sugar, half tsp. pepper,foil pan, 10 fresh bratwurst, 3onions, sliced, 2 tbsb. veg oil, 10 rolls


mix beer, sugar, and pepper in a foil pan centered on grate. brush oil on brats and onions and grillover coals until browned, place brats and onions in beer mixture, coer pan with foil and cook for 20-30minutes.

i'm bad ass on a grill....





can't beat a 2 inch portehouse......rare-medium rare...



heres a bad ass baby back rib joint i do.....



make sure you get baby back ribs and not spareribs....



the baby backs are the loin ribs ...kinda shorter than the spare ribs.
and the spare ribs usually have tips on them (the little srip on the 1
side w/ all the lil' bones and cartilage)



it's a big debate wither you leave the membrame on or off....i think i like off better...


(the membrane is a thin layer of skin/whatever on the bottom side(bone
side) of the ribs ..you can take it off w. a knife sllid under the
bone/and pull)



but rub the ribs w/ hot sauce then w/ a dry rub of spices ....i use
salt, brown suger, paprika, garlic powder, pepper, red (cyanne) pepper,
a dash of rosemary, a dash of old bay (they sell it at the store),
chili powder, dried onions. ect....



let sit as long as you can ..up to 2 days....



get a rosting pan....(a pan w/ a rack in the bottom)



put ribs on rack...



pour a little bit of water on the bottom of pan..(just enough to fill to the rack)



cover w/ foil...



bake at 250-325 for 4 hours....



you can baste every hour or so if you want.....and flip ect...(after 2-3 hours they get hard to handle so b careful...





i like to at maybe 3 1/2-4 hours remove the foil, drain the water and
brush w/ sauce lightly to slow cook some sauce w/ the moisture for a
few....



then take to grill ...sauce like crazy and grill up till they all good
n' shit...i sauce dem bitches at least 3-4 times a side while
grilling....



again they will fall apart easy ..it is a art in itself flipping
them....i use long tongs and hold them down the lenth of the rack...



then drink a bunch of beers smoke a few bowls and eat....

I though this thread might deserved a bump for 2006, as it is getting time to fire up the grill once again (which I have already done a couple times)

we actually grilled tonight! small animals of some sort tried to kill our grill (chewed through the hose from the tank to the controls,) and the grill manufacturer tried to screw us by not making a replacement for our grill (but they do for the more expensive grill,) but my husband of fixin' everything that breaks in our house. so far this year we have had steak, and figured out a marinade that i can actually have (food allergies), bbq chicken, chicken cooked with banana ketchup (we picked it up in st. lucia when we got married, yummy!</span>) burgers, shrimp, and tonight we had chicken marinated in lemon juice, molasses, and garlic (either use fresh crushed, 4 cloves, or powdered. the lemon juice should cover about half the chicken and about two tablespoons of molasses.) with salt and pepper of course. marinate it for at least an hour. throw it on the top rack of the grill and let is slow cook.
god i love summer cooking.

ok ok, the barbie is a major summer thing here (i say this as we're gettin into winter!!)...SO here's MY ideas...


We do sausages and chops and steaks and stuffand while it's a stereotype, prawns are really good too. You gotta get the big ones, and leave the shells on, then maybe squeeze some lemon on them while cookin and it's fabulous...bitch to eat (ie. takes ages to peel the shells) but it's a snacktivity and tastes bloody good!


ALSO, we do salmon, so that's always a good one too...and my best mate's mum does a fabulous roast lamb/pork on their bbq marinated with the lid closed (not a webber, but an acual bbq)....

that jalapeno recipe from the previous page looks wickedyummy. I'm definately going to try that one.
I'm not sure if this is a west coast fad, but there's lots of recipes for cedar plank salmon. I guess you could use other fish. You have to soak the cedar for an hour at least, the fish goes on top with whatever else, then it steams.
and corn in the cob, soaked in water with the husk on, then it steams itself in the bbq. if you put herbs/spices in the water that flavor will come through too- only if you don't blacken it
i love bbq, it could be the demise of my no meat foray.
