before i'd ever heard the words gluten or celiac, there was a dish that i sincerly loved. we would take spanish rice a roni, cut up some chicken and cook it in honey, then add together with a jar of salsa, and yum! now, i can't have the spanish rice a roni.
so the question is, does anyone have suggestions for seasoning spanish rice? not really sure what the seasoning would be, and then i'll have to find out if i can get them gluten free. anyone one have any seasoning suggestions?

Combine all ingredients in a large bowl. Stir until evenly distributed.
Put mixture in foil packet or plastic bag. Label with date and contents.
Store in a cool, dry place. Use within 6-8 months.
Makes 1 package Homemade Spanish Seasoning Mix.

tink, i tried doing a search so forgive me if you had started a thread explaining this. are you on a diet for health reasons, or are you allergic to gluten? if so what were your symptoms? i ask because i have HORRIBLE allergies, all year round. im sure im allergic to dust and mold, and i hate dusting so there ya go. but sometimes i wonder if i have some food allergies that make me feel like crap all time cause i keep eating the stuff i shouldnt be eating. i will probably head to an allergist once i have insurance again, but i was just curious if you dont mind me asking.
and way to go stace! i was trying to think if i knew and didnt and i didnt even think to google it. smileys/smiley1.gif

i have what is called celiac. it's an allergy to gluten, which is foundin wheat, barley, and rye. the sympotms vary greatly by person, some people having no sympotms at all. my main symptoms were losing 15 lbs in 2 months, having no energy (i'm pretty much a bouncing off the walls kinda gal), and lots of diarrhea (you asked.) i would also sometimes get stomach craps, feel unnaturally full after eating just a little bit, and would get very tired after eating. what was happening is the gluten was irritating my small intestines which stopped absorbing nutrients causing me to become malnurished.
the only reason i was even tested was my aunt being diagnoised. my doctor told me i had irritable bowel syndrome, and then gave me materials that said in the first paragraph, if there is extreme weight lose ibs is not the problem, there's something else. i finally bitched enough and my doctor did blood tests that showed it was worth looking into. i spent some time seeing a gastrointestinal doctor and more tests. after about seven months of testing between the two doctors turns out i was right.
it's been almost a year since i've been on a gluten free diet. i still slip up sometimes, and when that happens i usually feel tired and crampy.

LSV, there are a TON of people out there that are allergic to preservatives found in almost all processed foods. They're listed as numbers on the backs of food packets....so you might need to cut out the preservatives and eat less processed food and you might start to feel better.
I'm a little health nut (study health and nutrition at uni) and since switching to fresh foods rather than processed things, I feel a lot better (I lost a lot of weight too).
Tink, I have a mate with celiac and she can't even have her food in contact with wheat and rye and stuff otherwise she reacts and has to go to hospital...It's so good that they're making more products for you guys though...smileys/smiley17.gif

it's not so bad for me that i have to go to the hospital, but i have a reaction if there is even any touching as well. i read somewhere that the estimate is 1 in 300 people have celiac, so awareness is on the rise. now if they would just build a whole foods near me food shopping would be so much easier.
thanks for the link sway. i love rice, so any new way to prepare it is always welcome! i think the spices saucebaby listed will be what i need for this receipe.

i was talking to a guy with it a few weeks ago. i was aware that celiac was getting more common(or more recognized, rather). allergies in general, suck big time(i know, so eloquent).
im not sure what im allergic too specifically. ive suffered environmental allergies for years, and the more i read on low thyroid, there seems to be a connection with that. ive also read some interesting studies on women with endo tending to have more problems with allergies. i guess right now, the possible connection is that they believe both to beforms of autoimmune diseases but not enough is known about what causes endo and all that to really say anything for sure. some doctors think uncontrolled allergies agravate the endo, but again, there just isnt enough evidence at this point to say for sure.
and my endo book says i should stay away from meat, dairy, eggs(cause of the hormones found in it), chocolate, caffine, sugar and non-organic foods. right now that is difficult. not so much the sugar or caffine or meat, but finding a big enough variety of organic foods near me. it was a little easier where i lived in detroit. i havent touched beef or pork for years now, and i dont have chicken, turkey or fish very often. im trying to get to a point where i dont eat it at all.
when i can afford my thyroid pills, i feel a hell of a lot better. i still have allergies and i still have endometriosis issues, but im not depressed, im less foggy-headed, less lethargic, my skin looks better, etc. i reasearch the hell out of stuff, so i guess i could be called a health nut. ive lost a ton of weight too, but the biggest battle for me is endo, and then allergies.
good luck to you, tink. im sure that has to be difficult to avoid contact with something that is so common in the american diet. i once had a friend who was deathly allergic to anything from a cow. and that is doable, but it was still very difficult for him, especially when he was a kid.Edited by: LipstickVogue
